4 bubbly beach cocktails to sip under the sun

If you like Piña Coladas and popping open the Champagne, these are the fizzy tropical cocktails for you.

Sparkling Piña Colada

Bubble Beach Tropical Cocktail Sparkling Pina Colada

100ml rum
150ml chilled sparkling wine
50ml coconut cream
200ml pineapple juice


Combine your pineapple juice, rum, sparkling wine and coconut cream to a cocktail shaker packed with ice. Shake and strain, then garnish with a slice of fresh pineapple and an umbrella. Enjoy!

Fizzy Mai Tai

Bubble Beach Tropical Cocktail Fizzy Mai Tai

40ml lime juice
40ml orgeat syrup
60ml orange liqueur
100ml rum
Sparkling wine, chilled
Chilled lime and mint, to garnish


Combine the lime juice, orgeat syrup, orange liqueur and rum into a glass or measuring cup, and stir gently. Chill for at least an hour.

Divide the rum mixture between four cocktail flutes and top each up with sparkling wine. Cut four spirals of lime zest and garnish each glass with lime and mint.

Champagne Caiprinha

Bubble Beach Tropical Cocktail Champagne Caiprinha

½ lime, cut into quarters
Barspoon of sugar
50ml unaged cachaça
Chilled sparkling wine


Put the lime wedges and sugar into the bottom of a rocks glass and muddle gently. Add the cachaça and lots of ice, then top up with sparkling wine. Stir briefly and garnish with a lime wedge.

Mustique Fizz

Bubble Beach Tropical Cocktail Mustique Fizz

15ml passion fruit syrup
Half of a passion fruit
Chilled sparkling wine
Edible flower, to garnish


Pour passion fruit syrup into the bottom of a champagne glass, and scoop out half of a passion fruit on top of it. Fill the flute with sparkling wine, stir gently and garnish with a flower.
