6 delicious Mimosa recipes you’ll want to make right now

When it comes to fizzy cocktails, the Mimosa is truly king. Half orange juice, half Champagne, it’s probably one of the simplest and most delicious recipes out there! So this World Mimosa Day, why not celebrate your favourite bubbly buddy with one of these creative twists?

1. Sparkling Raspberry Lemon Mimosas

(Makes 2 drinks)

120ml Champagne or sparkling wine, chilled
60ml raspberry lemonade presse
Fresh raspberries


Pour 50ml sparkling wine into a flute, then 30ml of the raspberry lemonade.
Top with strawberries to serve.

2. Tequila Sunrise Mimosas

(Makes 1 drink)

30ml tequila blanco
30ml Champagne or sparkling wine, chilled
30ml orange juice
Orange slices, to garnish


Add 30ml tequila to a flute. Add sparkling wine until flute is about 1/2 full. Pour orange juice until flute is almost full. Add splash of grenadine to cocktail, garnish with orange slice and enjoy.

3. Blood Orange Mimosa

(Makes 6-8 drinks)

240ml blood orange juice
30ml Chambord
2 bottles of Champagne or sparkling wine, chilled
2 blood oranges, sliced, to garnish
Fresh mint, to garnish


In a large pitcher, combine blood orange juice, Chambord and sparkling wine. Add ice and stir well.
Add slices of blood orange and handful of mint to pitcher. Stir gently.
Pour into glasses or flutes and serve garnished with slice of orange and mint.

4. Blackberry Mint Mimosa

(Makes 1 drink)

65ml blackberry juice*
5 mint leaves
granulated sugar, for muddling
7ml sugar syrup**
Champagne or sparkling wine, chilled
fresh blackberries, to garnish
mint sprig, to garnish


*Prepare blackberry juice by muddling fresh berries and straining the juice into a separate container.

** Prepare sugar syrup by combining 240ml water and 240g granulated sugar in saucepan over medium heat. Stir until sugar has fully dissolves, them remove from heat, allow to cool and store in airtight container.

For the cocktail, add blackberry juice, mint leaves and a pinch of sugar to a cocktail shaker and muddle together. Add sugar syrup, then shake vigorously. Strain into flute and garnish with berries and mint, to serve.

5. Strawberry Mimosas

(Makes 2 drinks)

150g strawberries, chopped
1 Tbsp caster sugar
240ml Champagne or sparkling wine, chilled
Strawberries, sliced, to garnish


In a blender, blitz berries, sugar and sparkling wine until fully combined. Pour purée into flutes and top with more sparkling wine. Garnish with strawberry slice and serve.

6. Mango Raspberry Mimosa

(Makes 4 drinks)

Champagne or sparkling wine, chilled
60ml Chambord
Fresh Raspberries
175ml Mango Puree*

*For the purée:
1 Mango, peeled, pitted and cut into chunks
2 Tbsp. granulated sugar
1 tsp lemon juice, freshly squeezed


*Prepare purée by blitzing mango, sugar and lemon juice until smooth. Add more sugar, if desired.

For the cocktails, pour about 45ml of purée into each flute. Then, pour sparkling wine until flute is 3/4 full. Add 15ml Chambord to each and garnish with raspberries to serve.
