Blackberry Fizz Martini
Recipe adapted from Climbing Grier Mountain
(Makes 2 drinks)
170g blackberries, preferably fresh
170g caster sugar
240ml lime juice, freshly squeezed
6 lime wedges
Sparkling wine, chilled
1 tsp salt
1 tsp pepper
First, prepare a blackberry purée by blitzing berries and sugar together in a blender. When sugar has dissolved, let mixture stand for 5 minutes then strain through fine mesh sieve. Set aside.
Combine your purée, gin and lime juice in a large pitcher, stirring to combine.
Prepare your glasses by running a lime wedge around the rim and dipping them in a small plate with salt and pepper.
To serve, fill each glass with ice and pour cocktail evenly between then. Top with sparkling wine and garnish with a lime wedge or zest, to serve.
