Sparkling Cinnamon Pear Cocktail

(Makes 2 cocktails)
1 pear
1 lemon, juiced
4oz dry gin
1 1/2oz cinnamon simple syrup (see below)
Sparkling wine, chilled
ground cinnamon to garnish
For the cinnamon simple syrup:
1/2 cup water
1/2 cup sugar
2 cinnamon sticks, broken into pieces
Method:
Make simple syrup by boiling water, sugar and cinnamon pieces in a small saucepan over high heat.
Stir until sugar is completely dissolved.
Remove from heat and let cool completely.
Strain into glass jar or sealed container until ready to use.
(For a stronger cinnamon flavor, allow cinnamon sticks to steep in syrup overnight and strain next day).
For cocktails, first cut the pear into chunks and process in a food processor until completely liquid.
Strain mixture through fine mesh sieve into cocktail shaker.
Add cinnamon syrup, gin and lemon juice and shake well.
Strain into two coupe glasses and top with sparkling wine.
Sprinkle with cinnamon and serve.
