Celebrate National Tea Day with this Earl Grey French 75!

In honour of National Tea Day tomorrow, we’ve sourced a delicious twist on one of our favourite fizzy tipples – enjoy!

Recipe adapted from Cookie + Kate

(Makes up to 4 drinks)

For the Earl Grey-infused gin:
120ml gin
2 teabags Earl Grey tea

For the honey sugar syrup:
2 1/2 Tbsp. honey
2 1/2 Tbsp. water

For each cocktail:
30ml Earl Grey-infused gin
20ml lemon juice, freshly squeezed
15ml honey simple syrup
Sparkling wine, chilled
Lemon twist, to garnish


First prepare your infused gin. In a covered container, steep your tea bags in the gin. After 1 hours, remove the tea bags (squeezing out any excess liquid) and discard the bags.

To prepare the honey syrup, in a small saucepan over medium heat combine honey and water. Once honey has fully melted, remove from heat and allow to cool completely.

To prepare your cocktail, fill a shaker with ice and combine gin, lemon juice and honey syrup. Shake vigorously until well-chilled, then strain into chilled glasses or flutes. Top with sparkling wine and garnish with a lemon twist to serve.
