Mother’s Day is on Sunday, and with breakfasts in bed to be enjoyed and an entire day of celebration in store for those special women in our lives, we simply had to source the best fizzy cocktail for the occasion. Pair this beautiful Bellini with Mum’s brunch and start her day right!
Grapefruit & Mint Bellini
Recipe adapted from Camille Styles
(Makes 6 drinks)
mint sugar syrup*
75cl grapefruit juice (freshly squeezed preferable)
1 bottle sparkling wine, chilled
*For the mint syrup:
Combine 100g sugar, 100ml water and one bunch of fresh mint leaves in a small saucepan over medium heat. Bring to a boil and simmer until sugar fully dissolves. Allow mixture to cool fully, then strain syrup into a resealable container.
To assemble the cocktail, divide the grapefruit juice and the syrup equally between 6 flutes. Mix well. Top with sparkling wine and garnish with edible flowers, if possible, to serve.
