We’ve got a four day weekend ahead – so it’s time to pop the fizz! If you’ve got a love of fizz and a bit of a sweet tooth, this candy-coated recipe is exactly what you need to whip up come Easter Sunday.
Speckled Egg Mimosa
Recipe adapted from The Effortless Chic
(Makes 4-6 drinks)
blackberry sugar syrup*
1 bottle of sparkling wine, chilled
1 bag of speckled eggs
1 handful of edible flowers, to garnish (if desired)
*For the blackberry syrup:
First, make your blackberry syrup by combining sugar and water in a small saucepan over medium heat. Bring the mixture to a boil, then add in the blackberries and muddle them until they break up almost entirely. Simmer for a few minutes, then take it off the heat and allow to cool completely. Strain and keep stored in airtight container.
For the cocktails, place 2-3 speckled eggs in the bottom of each glass. Measure 60ml of blackberry syrup into each glass, then top with chilled sparkling wine. Garnish with edible flowers to serve.
