It’s one of the tastiest holidays of the year, but why not make it even more delicious by bringing fizz into the mix? With a Prosecco-soaked batter and a Prosecco syrup, to boot, these boozy stacks are the ultimate Pancake Day treat!
225g plain flour
2 tsp. baking powder
1 tsp. bicarbonate of soda
4 Tbsp. Prosecco, or other sparkling wine
150ml Prosecco, or other sparkling wine
Mix flour, baking powder and bicarbonate of soda in a bowl.
Create a well in middle of mixture.
Pour in buttermilk and Prosecco.
Add eggs and whisk until smooth.
Let mixture rest for 1 hour.
When ready, scoop small ladleful of batter onto a hot, well-greased pan and cook both sides.
Set pancake aside and repeat process until all batter is used up.
In a small saucepan over medium heat, combine sugar and Prosecco.
Cook mixture until sugar fully dissolves and syrup forms, about 3 minutes.
Prepare pancakes with any other toppings you may want to enjoy.
Top with warm syrup to finish and enjoy!
