Where It’s From
This Cava is made in the cellars of Finca Ca n’Estella, a family owned and run winery just an easy 40-minute drive from the beaches and tapas bars of Barcelona. With a sunny Mediterranean climate and a light smattering of rain throughout the year, it sits in prime Cava country.
How It’s Made
July’s Cava Rabetllat i Vidal Brut is made using two of the classic Cava varieties: Macabeo and Xarel-lo. The grapes are harvested at night from the vineyards on the Finca Ca n’Estella estates.
Cava is made using the Traditional Method, the same used to make Champagne. This means that after fermenting once to become alcoholic, the wine is put into the bottle with yeast and aged again.
This wine is aged for 24 months in the cellars, or cavas, at the Finca Ca n’Estella winery.
Who’s Behind It
Finca ca n’Estella is owned and operated by the Rabetllat family. The current manager, Anna Vidal Rabetllat, is following in the footsteps of her father and grandfather, a winemaker who came to Spain from France and fell in love with the estate.
The Rabetllats love welcoming visitors to their beautiful estate. Many visits start with a wine tasting of their wide range of Cavas, and end with lunch in the vineyard or a horseback ride across the estate.
How It Tastes
This straw-coloured wine has a very intense nose, with hints of almonds and nuts. On the palate it’s instantly pleasant, with soft bubbles and initial acidity, followed by sweet flavours.
How to Drink It
Serve this wine chilled, ideally to between six and eight degrees Celsius. It’s delicious with Iberico Ham and desserts that aren’t too sweet.
