Marmalade Mimosa
With the comforting flavours of hot toddy and the freshness of chilled bubbles, this has all the makings of a wonderful cocktail.
1 tablespoon orange marmalade
1 teaspoon honey
1 clove
Dash of fresh orange juice
Dash of whisky liqueur (optional)
110ml chilled sparkling wine
Method
Gently warm marmalade, honey and clove in a small pan. Strain liquid and allow to cool completely. Pour marmalade mix into a flute glass, add a dash of fresh orange juice and whisky liqueur (if using). Top up with chilled sparkling wine, stir gently and serve.
Blueberry Bellini
A balance of sweet, tart and refreshing – with a boozy vodka kick – this deliciously fruity concoction makes a surprisingly sophisticated sip.
1 ½ tablespoons blueberry jam
22ml lemon juice
45ml vodka
90ml chilled sparkling wine
Fresh blueberries and thyme to garnish
Method
Add jam, lemon juice and vodka to a cocktail shaker. Add ice and shake vigorously for 15 seconds. Strain into a tumbler filled with ice. Top up with chilled sparkling wine. Garnish with five blueberries and a sprig of thyme to serve.
