45ml white rum
15ml Luscombe Lime Crush
Chilled sparkling wine
Sugar or simple syrup, to taste
Lime wedges and mint, to garnish
In the bottom of a glass, muddle the mint with the simple syrup. Add the white rum and the lime crush, stirring to combine. Pack the glass with crushed ice and top up with the chilled sparkling wine. Garnish with lots of mint and lime.
