Recipe: Love Potion Cocktail

Spring breathes new life into the world after winter, but it’ll take a fresh and flavourful cocktail to do the same to us! This sparkling tipple combines beautiful ingredients to make a tipple that’s as tasty as it looks. Enjoy!

Love Potion

Recipe adapted from Lark & Linen

(Makes 4 drinks)


For the cocktail:
120ml blackberry sugar syrup*
1 750ml bottle of Champagne (or other sparkling wine), chilled
4 sprigs of thyme, to garnish
8 blackberries, to garnish

*For the blackberry sugar syrup:
80ml water
80g sugar
50g blackberries


Prepare the blackberry sugar syrup. In a small saucepan over medium heat, combine the water, sugar and blackberries. Bring mixture to a boil and allow to simmer for approximately 10 minutes. Strain syrup and allow to cool fully before using.

To assemble the cocktails, distribute the blackberry syrup among 4 glasses or flutes, placing about 30ml in each glass. Top with sparking wine and garnish each drink with blackberries and a sprig of thyme to serve.
